Started like this at the end of April

And early August (~100days)

Any idea why it's growing so pointy and straight up?

Appears to be under different lights. Pointy is normal but the up is neat. Maybe flow is going up the face of the rock? I did read something on advanced aquarist awhile ago about corals growing towards red light. Seems the second pick has more red in it. I could be wrong.

I added more UV, but the rest is the same. Here's the middle state early on but after I added the UV

Honestly though the color is much better and growth looks good. Might be better to just let it grow and enjoy it for a while. The points are going up because of light but in my experience birdsnest tends to grow up like that a little anyway.

I have a double ended 14K 400W MH right over it. There's two more 400W MH over the 8ft length. The tank is supplemented with 675W LED.

Not enough light?

Thinking through this... There are two peaks on either side of the coral. It sits in between them. So, it's probably not getting much light from the MHs on either side. Maybe it's growing up because the other lights are shadowed.

This one is right in the valley between the rock peaks. Same growth pattern

How did you get it to pink again? Mine is dark red brownish. I have enough flow and light. The nutrients are stable and under control.

I don't know much about the MHs (I run LEDs on my tank) but when was the last time you renewed your bulbs?... Just throwing that out there

Birds nest tend to be pointy and grow up. Looks like they are coloring up well in your tank. They do tend to grow like weeds once they get doing.
