Mounting encrusting montipora

How do you do it? To rubble you can move around? Directly to rock work? Dome? Sand? Back glass?

Im picking up a could pieces but dont want to attach them to my rock work as they take over rock like gsp [emoji15]

I think you've basically answered your own question, but yes to all of the above except sand. I've never seen montis grow on sand. You can do little rock islands if you want to isolate from your main rockwork. I just put mine on my main rock work and trim them back if they get too close to anything I'm worried about (like acros).
 
The sad truth is that montipora (encrusting) in a healthy vibrant tank WILL grow like a weed and take over large parts of the rock work. I found trimming to be difficult when the tank has grown out and chipping off pieces is possibly detrimental to other corals next to it. You literally vibrate and move the whole rock piece.

I like the idea of creating a rock island, choosing montipora that grows up or plating, and avoid encrusting because of the issue above. I love encrusting monitpora but I am reusing rock from an old tank on my new one and the encrusting montipora literally covered some pieces. I had to chip it off. I know if I add them again a small 1 inch piece will eventually become a bread plate sized monster in short order.
 
I don't have a ton, but the ones I do I put on large pieces of rubble rock so I could attempt to control them in the future.

Will they crawl up acros and smother them? The closest thing to mine right now is a torch. Should I relocate before it crawls off the plug? It's growing at an impressive rate.

You just have to experiment. I've found that generally acros will kill the montis and hold them back. But it's never a guarantee.
