one Osmolator on two tanks

you can if you run them both through one sump.

No, the sump would have the sensors in it, the tanks do not have any sensors.

Sorry, what I meant to say was two separate systems with 2 seperate sumps. So I need a sensor in each sump and possibly two pumps in the resovoir. I guess the question is, Can the controllerl run more than one sensor and one pump?

No, you need two seperate osmolators to do this.
