In a drilled aquarium with internal overflow and external sump, where should I place the water level sensors to get the best readings regarding water level changes ? Would you reccomend placing them on the tank edge or on the sump edge?

They would go in the sump, the tank water level wouldn't change until the sump runs empty. You typically would place them in the last chamber of the sump before the return pump so long as there are not too many bubbles or excess turbulence in that chamber.
