OT: Beer Cellar

Yup That Stuff
I didn't want to crowd the beer thread with this so I thought I would start a new thread.

So I am going to try to start a Beer Cellar. I know some of you do this and want to know some good beers to start with. Remember I'm in Binghamton and the selection isn't the greatest.

Also if you have any tips for this as well they would be appreciated. I have a read some things about it for instance waxing the tops for added insurance of the seal for long cellaring. Thanks
 
When I am in Binghamton I always stop at Wegmans they have a pretty decent selection of Craft beers. The beer cellar is going to depend on your tastes.. I would divide it up into sections .. definites/ experiments, then by types porters, stouts IIPAs black IPAs etc.

I would start with any of the Cooperstown brewery selections, Lake Placid UBU ale wasnt bad, seems that Sam Adams doesnt stay consistent with some of their brews , but I usually go with the black Lager, Noble Pils.. Wagner brewery has a decent IPA,
My favorites are Arrogant Bastard ,and Rogue dead guy, Chimays arent bad either..
Hoptimum when they have it, Saranac porter and stouts, and their Imperial IPA.. and then any brew that is homebrewed ...St. James Porter..
 
Thanks, I am trying to see what beers will get better for what period of time or if some will start to degrade after a certain amount of time. I have been looking and have a starting list of some I am going to get. I would love to buy some St. James porter to age!! PM if you are willing. I am in Owego now so a bit closer to ya.

Sam adams seasonal's have been really disappointing to me this year, Noble Pils verys from case to case for me this year kinda weird. I'll have to check out the lake placid stuff.

I have thought about brewing, i used to do it but i stoped for a bit and sold all my stuff. ill get into it again some time. just to busy now.

dfh 120 is no where to be found :(. they dumped the last batch cause it was bad or something. but it will be on the list once its avalible agian.
 
Dfh 120 is seasonal too. Palo santo is good, just a little dark for my taste.

I just picked up a two tonight. Sierra Nevada 30th anniversary Jack and Kens's ale black barleywine ale and Laguntas Little sumpin wild ale.
 
Ommegang Abby Ale and Ommegang Three Philosophers both age extremely well.....I had an Abby Ale that was aged for probably over 5 years and when the metal top was unscrewed, the cork popped right out of the bottle :celeb1: It was one of the best beers I've ever had. I'm actually going to get a few bottles of each of their beers and age them to see what happens :beer:
 
Cool I'll be on the look out for the DFH 120. Thanks for the recommendation MD Ocean Girl I picked up the Abby Ale this morning.
 
You're welcome! I hope you enjoy. :) I'll see if my bf has more recommendations when he gets home from work....he's quite the beer fanatic :D
