OT- Do any of the Italian Markets have this?

Well first off, I love St. Louis Style pizza but also love Neapolitan and New York Style.

St. Louis Crust is easy to make/find but it's the NY and Neapolitan that are hard to find.
The dough is a pain and would like to make it much more often.

I'm familiar with most the italian markets in St. Louis but don't have time to contact every single one. I used to buy a lot of stuff at Allen Foods (Now US FoodService) but if they had a "good" NY stlye crust than I would bet it's an exclusive meaning the general public/restaurants can buy it. Just who it's made for. Most places with good NY or Neapolitan pizza MAKE their own and doesn't have the shelf life if I buy it from them.

Anyone know of any italian markets, etc...?
 
Digregorios, Roma (wholesale only I think), and Vivianos
are what come to mind first.

But very few Italian markets are in the pastry business.

I bet if you call Missouri Baking company owned by the Gambaros they will have a solution for you.

For X-mas and New year we make pizza and we have Missouri Bakery make us pizza dough, just call ahead. It might not be 100% of what you are looking for but I bet it is darn close.

Correct. I don't want to make it myself due to how much I'd use and pizza cooking is a lot like this hobby, there is ALOT of information out there and that recipe you posted is pretty much a generic. Not that I don't appreciate it (because I truly do) but if I was going to spend the time to do it myself and (not be able to freeze) I'd use a few other recipes.

Digregorios and viviano's were some that came to my mind but have never looked for this specifically for this. I'm not worried about anything being wholesale. That's easy. "Exclusive" is what I worry about.

I would agree that most are not in the pastry "business" but there are a TON that handle a lot of pastry but not nec. in the pizza crust though...However, I think I'm more going to find retailed items vs. stuff made locally. Just thinking I might find them at one of the local markets as it's more of a specialty item

Missouri baking company might not be a bad idea, but when I was thinking about them, I was concerned about something that I could freeze rather than always buying fresh. I'm looking for more of a retail item.
 
JX- after reading my reply again, I just wanted to make sure that my reply didn't come off rude and I know I said "because I truly do" but wanted to make sure you didn't think I was being sarcastic.

BTW- 44 points with one to go before AS- Last 3-4 years the last team to get in the WC averaged 93 points, so basically all we have to do is win tomm. and just simply have a better 2nd half than the first.
 
not sure if this is what your looking for or not but trader joes sells 2 different kind of pizza crust one plain and one herbed they are both very good. They are raw in a bag and you have to form it. i have used them both with success.
