Its what got me into the hobby in the first place. I think the pegging is a good idea because like you said it allows you to remove the corals easily. In the coral QT, is that a maxi-jet? I havent seen that type of mod before.

i agree that pegging will give you the easiest opportunity to remove corals when needed, but wont that only last for so long? judging by the size of "the factory", any peg would have been buried under a 5" diameter coral stalk! your probably going to need to pay close attention to the base of each coral to make sure they dont overgrow the pegs.
