If it does it within a few minutes or instantly it could be some electrical interference from your ballast or light powercords causing the change. If this is the case re-route your Ph probe or powercords. I have seen the same thing with an ORP probe and it was the lighting powercords.
The PH drops slowly over the course of the lighting schedule. Then the next morning the PH is back up again. It is shifting like 1 - 1.5. The light wires and powercords are not even close to the probes. They are all ran through the ceiling.
