If Aperture looks interesting to you I'd recommend that you take a look at Adobe Lightroom as well. I own both and really prefer the image quality of LR over Aperture. On a recent workshop I had a guy, who worked at the executive level for Apple, and he preferred LR too.
At some point you'll probably want to add Elements to that mix but LR would be an excellent starting point. It takes away 100% of the pain from RAW processing.
LR, from a feature standpoint, is nearly identical to Aperture. While they do have some localized editing features you're generally working on the image as a whole.
Elements is a stripped down version of Photoshop. These are what folks refer to as "pixel" editors. They allow you to do very targeted adjustments.
I use elements. Very good program because I mainly "auto adjust." One guy I work with uses lightroom and he really likes it. More than CS3 I guess on his opinion. I've never used it personally.
Canon gives you a RAW editor free in the box with the camera which should be enough. I haven't heard of any compatibility issues with Adobe and the G10 though.
CS3 is a very very powerful tool if you understand how to use all of its features and functions. Lightroom would be better if you want something very user-friendly and easy to use. Other than that, I'd stick to Canon's digital photo professional software or Nikon's NX2. Hope that helps buddy.

Check out "The GIMP." I t's a free, open source photoshop clone. It's been a while since I've used it, but the last time I did it was pretty darn close to photoshop in featuresets.
