The chances of introducing ich via snails and hermit crabs is pretty remote ... but it can happen. Some of the LFS have wised up and keep their inverts separate from fish ... ich require a fish to perpetuate its life cycle and if there are no fish in the tank then the tank should be ich free.
As previously stated I suspect that most aquarist do not QT snails and crabs. With that said I don't see any reason why you can't QT snails/crabs along with fish ... however if the fish has a disease then odds are good that you will have to remove the snails or crabs since many/most meds are lethal to inverts.
