Should I be concerned with the level on the sides? Never had this problem, but I am in a older house. Should I shim the tank up in the front or does that look alright even tho it's not all the way in the middle?

Level it just for peace of mind. Do it now before it gets more difficult (after livestock has been out in).

You can pick up shim packs at HD.

I'd be very concerned with the 2nd one, and I'd try to dial the first one to be even closer to the center. Shims make the process very easy. A little extra work right now will prevent possible problems later.

+1 Level it up.

BTW, sometimes those cheap plastic levels are not accurate. Make sure by turning it end for end, 180 degrees. If it shows level (exactly between the inner lines) both ways you are good to go.

Also be sure to level with shims between the stand and floor, NOT between tank and stand.

You may cut a piece of3/4" plywood the size of the stand's base (footprint) and place it under the stand, attach it to the MDF with countersink screws and a pilot hole. Then use shims to level it.
I mentioned the plywood since you mentioned before some swelling of the stand.
You may run a bead of water resistant glue between plywood and MDF
