Rebel XTI with standard 18 /55 lens setting?

I don't really know much about photography at all. Can anyone just tell me what settings you are all using to get these great pictures. I can't seem to get a decent shot. When the flash is on it doesn't look good and when off it doesn't look good either. I know there are definitely some setting that can be changed so please help me out if you can.

For most coral shots with good lighting I don't use flash. If shooting corals I would shoot av mode so that you can control DOF and if shooting fish I would shoot in tv mode so that you can increase your shutter speed to catch the fast moving fish. ISO would range anywhere from 200-640 just watch your exposure. Ideally it's best to shoot full manual that way you can dial in how fast you want your shutter and your aperture to let in light and get the right exposure aperture will also determine how much of your shot is in focus as well. Good luck play around you'll find the magic number that works for you just get out of auto mode
