The brown color comes from the algae that lives within, if you feed more (more nutrients) the algae thrives and the nem looks more brownish. If The red coloration is strong enough you will not notice the brown zooxanthelle showing as much as a nem that is more drab.
The color of the nems on DD are commonly inaccurate, but they are also taking under 20k bulbs, so meh. Also they dont doctore their photos they just change their camera settings to take the pictures differently, easy to do on a high end camera. I can make my pictures look like my tank is under 10k lights with just some simple white balancing.
Your nem looks fine, feeding with silversides 3 times a week is excessive. It will look more vibrant when it is more sucked up (tigher skin is less see through). I have a nem that is very similar in color and it is decently sized.
