safety connector

I received my tunze safety connector today. I plan on using this battery.

I see there is a plastic connector at the end of the positive/negative wires(on the safety connector). Do I just need to run wires into this connector and to the terminals(on the battery) to make the connection?

Yes. Just run the wire from the terminals to the connector.

What kind of wiring would i use

Depending on the pump your Amp draw will be between 1-3 A at 12V so it doesn't have to be anything substantial 12-16 gauge should be fine.

16 gauge speaker wire do the job?

Yes, just make sure to get the polarity correct, one draw back to speaker wire is the polarity isn't so clearly marked if at all.
