There were a few asking for the salsa recipe I served so I will just post it for all to have
Its VERY easy to make and if you like cilantro in a salsa this is an awsome recipe.
2 - 28 oz. cans of diced tomatos ( I use Hunt's store brands are not as good IMO)
1/2 white medium onion
1 or 2 cloves of garlic (I used 2 and I use the pre-diced in a jar and also feed my fish the same
)
1 or 2 jalapenos peppers ( I always use 2 and take the seeds out)
1 bunch of cilantro
1 can ro-tel tomatos (optional, the origianl recipe doesn't call for this but I like to add for a little chunkyness)
salt to tast (at least 1/2 tsp....)
Squirt of Lime juice for color retention
Drain one can of tomatos and pour into food processor or mixer. Add onion and garlic. Mix ingredeients. Next add second can of drained tomatoes. Then add the leafy part of the cilantro and one pepper (add another pepper if its not hot enouph). Mix well and add salt and lime juice last. This mixes up pretty runny is why I like to add a can of rotel tommatoes in after the blending is done for a little texture which is a personal preference. I find all the fresh ingredients at Krogers.
