I got him about a week ago to help take care of any uneaten food matter that may end up in my sandbed, but he seems to spend quite a bit of time on the glass too. Is that normal?
When I see them at the LFS they are always buried in the sand.

IIRC, sand sifting stars eat microfauna in the sand (i.e. living organisms, not left over fish flakes) and will not help you with your uneaten food matter, regardless of what the local fish store told you. Chances are, the star is already starving and thats why its roaming the glass in a desperate attempt to find food.
