I am having a 72x30x24 built, should I have my holes drilled for sch 40 or 80 bulkheads. I understand that our tanks nare not being run under pressure, I just wonder if the gaskets on the sch 80 are worth the extra cost.

If your hole size can accept Hayward Bulkheads go for those. Savko bulkheads IMO sometimes are hard to get the right amount of squeezing force needed on the gasket to be watertight. Hayward uses a higher quality gasket and the construction is 10x better IMO.
I agree, SCH80 bulkheads from Savko. I however have had no issues tightening them. I hand tighten them, then take one of the "strap" style wrenches (strap tightens around the device you're trying to grip) and give it another 1/8th a turn or so. The SCH80 are worth their weight in gold just attempting to get them tightened in my opinion. SCH40 are a pain to get tight.
