Here's a member's tank that has seagrasses and horses, maybe this can give you a bit of an idea of where to start? Hope it helps.

Now that's actually caulerpa in there, but you can do any seagrasses that'll grow.

EDIT: I do realize these may be a bit over the top compared to what you might be thinking, but it's a pretty good starting point. Could you give us a bit more of an idea of what kind of budget you're running on or what the logistic constraints are? Are you trying to go big? Small? Do you want it to be planted or rather be a bit more minimalistic?
