Snails or Crabs That Will Survive The attack of the munchers

What will survive some really mean Valentini Puffer, Picasso Trigger and Niger Trigger from pecking away at them. Looking for any type of crabs or snails that they won' t eat. Also, a really dumb question there is anything that eats crap from the bottom of the tank. I didnt think so, someone had just said you didnt.
You still needto clean the gravel. right?!!/?!
