If for example I fed my sponges and had them grow big then
fed a little less at a later date after they grew would this release toxins into the water as it shrunk over time?
There are too many species of sponge to make such a generalization. Also the effects of ramping up and then cutting filter food dosing would likely affect more than just the sponges.
