jf I bought 3 female spot breast angels.would 1 turn male. or should I just get a pair when available.

With three spot breast females (melanospilos) once they get to a couple of inches in size one should turn male. Hopefully competition of a harem will accelerate the process for you. You could try different sizes and the largest should turn male. A number of males kept without a female have reverted back to female. Usually females ship better as well.

Problems may occur if more then one wants to be the group leader "leader".
