Store display mode?

On the Ecosmartlive app for iPhone, there is an option "store display mode" and to enter it you must enter a password.

What exactly is the purpose of that mode?

That is a great question. Store Display Mode is a sort of demo mode that is meant for a store display. It essentially locks out features that would modify your profile. To start this mode you can enter any password you like and then continue to use that password for future uses of the feature.
