New 55gal. set-up with arragonite substrate.
How deep should it be?

well its a hard question to answer really, i have an inch around my rocks, have had 2" before, the general concensus is under 2" and over 4", it depends on what you intend to keep and if you intend the substrate to be part of the filteration or not

What grain size is the sand in mm?

It says grade reef sand on the bag but its not really sand, its a little more coarse. Right now I have it coming to the top of the black plastic on the bottom of the tank. Should I add more?

This is a question that your going to get a lot of differing opinions. the best thing for you to do is read and research and find what's going to be the best for you.
