the thing im confused about is will the skimmer have the same size of the footprint all the way up? cause my 4 inch filter sock hanger is in that section too

So im gonna grab 3 baffles that are 6.75 inchs high and 1 that is 8 inchs high. I think that will work.

You could make the baffles 7 inches and just raise the skimmer up a bit with some egg crate. Nothing wrong with that a lot of people do stuff like that.

It's a cone but the tube you use to adjust it does just go straight up along side it. They make filter socks that don't need holders if need be.

What do you think of doing everything 1 inch more and adding a 1 inch thick cermedia plate under the skimmer to compensate?

Why not just make them 8" then and make it simple then go 10" on the middle baffle? It's up to you just be careful not to go to tall. Remember if the power goes out that extra water is going in the sump. Should probably double check with someone on the math for that just to make sure.
