Wocka, you are from Wellington? Small world, thats were I'm from. But anyways, yea, you can put them side to side. The mantis won't be able to hammer through both of them, let alone one of them.
We keep dozens of tanks side by side. Generally the stomatopods learn fairly quickly that they can't get through the glass, but they certainly do watch one another. Occasionally we have to slip a piece of cardboard in between two tanks if the animals are particularly aggressive or disturbed, but I have never had a tank destroyed by the resident when it struck trying to get at an animal in another tank, The cracks we have experience were all from digging attempts or strikes at an animals own reflection.
