Check your parameter settings in the camera. Saturation is adjustable in-camera (as well as in post-processing). Also, different lenses can produce richer or more subdued colors, so there could be any number of reasons.

Man am I dense. I can't figure out how these work, or where to get them. I also have the Rebel XT. I do have the 50mm Macro lens and I like it, but I can't get that close. Would those work well with the 50mm?

You have to look at the specs of the lense. The kit lens takes a 58mm filter. These close-up filters screw onto the end of the lens where the lens cap goes. I can take a picture if that will help you out, lol

For the 50mm macro if i'm not mistaken the lens goes to 1/2 life size. Diopters such as these will help you focus closer getting you to a 1:1, but not get closer to your subject. If all you're looking to do is focus closer, than these or the EF 1:1 converter will work. If you're looking for more reach you'll need a little longer glass. HTH.
