I would say:
Montipora capricornis
Montipora digitata
Pretty much any birdsnest
Green slimer stag is also pretty easy and a fast grower (great looking too)

definitely easiest. If you want a little more variety with slightly more difficulty, most corals in general that has been in captivity for a long time
