The foam cup seems to get 'jammed' at the top with thick foam. Am i skimming too dry or what should remedy this?

Problem is that it's happening with less that 100 mL of skimmate in the cup and after only a day
 
If that is the case you can open the blue plastic screw by turning the screw counter-clockwise to provide more air into the skimmer. I would turn two to three complete turns of the blue screw and see how it goes. You will get wetter foam and slightly lighter colored gunk.

The sediment build up on a cup breaks the bubbles and slows the skimming process substantially. It may be that the tank has a lot of fine sediment that is building up, I would try skimming wetter. From my experience I usually collect about 100ml in the first couple days and then it takes five more days to reach about 250ml, the cleaner the cup the better the skimming within reason.
