Watchmen Gobies

Are there any watchman gobies that'll host with both a tiger and a peppermint shrimp?

Huh? You have an existing tiger shrimp and peppermint shrimp hosting together, and want a watchman goby to join them? Just want to make sure I understand...

The goby will host one or the other but most likely not both. You will have a hard time trying to get two none paired shrimp of the same kind let alone different kinds to pair up. Get two gobys and the shrimp you want for the best chances

What most people call a "peppermint shrimp" (Lysmata sp.) is not symbiotic with gobies. Only some species of pistol shrimp (Alpheus sp.) are symbiotic with gobies. I'm assuming your "tiger shrimp" is a tiger pistol in which case it should pair with a watchman.
