If you saw one of your other hermits grab the fish, I think that is the most likely culprit.
That said, it's possible something went wrong with the long acclimation or the fish was already weakened and it just made an easy target for someone else.
If it's a primarily algae eating hermit (rounded scraping claw) it is unlikely to catch fish, but they will scavenge on any dead body within minutes. I see that every time I feed my Regals clams.
If the hermits have pointy claws I would be careful with them - those are usually carnivorous and may actually catch and kill sleeping fish.
