What is the white flesh in between my zoa polyps? I also notice these white fan looking things emerge when the lights are off.

It's hard to say, but I would imagine your zoas will outgrow them. Zoas can be tricky to keep despite people claiming they're "easy". I have had wild success keeping them and no success. I've never had issues with pineapple sponge being a pest. They're a good part of a healthy reef. If you're worried about them though, you should be able to get them off pretty easily.
