Which toadstool is more colorful - the variety with neon green skin or the one with green polyps?

I prefer the green polyps

I think it also depends on your lighting. If you have some good actinics, I think both will look good, but the green polyp might pop a bit more under the lights.

I prefer the green polyp, too. The green skin seems to lose/fade color as it expands.
