Why do Clams need mature tanks?

Hi all!
I am not trying to be belligerent with my question, just trying to gather as much information as possible before I risk the life of a clam. I have been doing lots of research and ordered Daniel Knopfââ"šÂ¬Ã¢"žÂ¢s book on Giant Clams. What I see in the forums is that clams should be placed into mature tanks. So my question is: What is it about a mature tank that clams need?
I know they need stable pH and all other water params to be stable and excellent. Is this the reason? Mature tanks have more stable pH?
Or do mature tanks have more of a food source for smaller clams?
I have a 150 gallon (72 x 24 x 28) set up with 3 x 250W DE 10k Ushios (magnetic ballasts) with 4 x 39 T5 actinics. I am not sure if I have enough light for a clam on the sand bed. I am hoping for an SPS tank, but patience is the most important thing for success.

So, if any clam experts can elaborate a bit more on what clams need to thrive, I will happily learn!

I sometimes wonder if it is less the tank and more the reefer that needs a year or more under their belt when people discuss "mature" tanks. :)
