Will a Goby dig up ammonia?

I'm new to marine fish and my tank is a little over 6 months old with mostly soft corals and a few hammers. There are blennies and 2 clowns, but I've wanted to buy a goby for a while.
My main concerns are:

1) Will all the digging from the goby kick up the ammonia/nitrites from in the sand bed?

2) Feeding....My tank is fairly small (30gal) and I've heard from people that to have a goby you need a fairly large tank otherwise they will starve.

I'm looking for a small, colourful goby which could live with a shrimp.

I'm still deciding on whether its a good idea to buy a goby........
 
If you get a shrimp goby, they don't really sift sand, just the occasional grab of food off the sand. The pistol shrimp you pair it with will move more sand than the goby. A shrimp goby/pistol shrimp combo will be fine in a 30. We have an orange-spotted goby, but he hasn't paired with our shrimp yet in over a year. Here are some other shrimp gobies.
