Do you think they would get too big in a 8ish Gallon tank?

That will be fine. It will eventually outgrow the tank but is very easy to frag back to the size that you want it. All you have to do is take it out of the tank, use a razor blade to cut off sections of the coral and then sell or trade at your LFS the frags you cut off.
