So i have had nitrites for about a week now but my ammonia is still high? any idea when i should see this start to go down as the nitrites go up?

Ammonia 7 PPM
Nitrites 1.25 PPM

Your guess is better than any, you will get here. Each tank is different, so it could happen today, 2 days, 1 week. There is only 1 thing for certain. Once the ammonia goes to 0 and nitrites spike and goes to 0. Nitrate will raise. To make sure you have completely cycled, I would ghost feed or add a ammonia source. Wait for a week and test for ammonia and nitrites.

they are high becasue there is not enough bacteria to break them down to 0 which is what you are looking for..your bacteria population needs to grow..depending on what you started with, dry rock. live rock, all dry rock a little live rock, your sand bed..it just all depends..They will start going down, IMHO is when ammonia gets close to .25 add more ammonia, this will keep building up you bacteria populations while you wait for your nitrites..you will soon see that it won't take long for your ammonia to drop, and then you will be waiting for your nitrites to drop..

As said above each tank is different some people see nitrates right off the bat, some don't

Leave it alone and let nature take care of things. Spend the time waiting reading through the stickys at the top of this forum.
