I had one for two years as well, it stayed a male and IMO yours will too. Never heard of one changing sexes. The blue under his chin will become pale or very vibrant depending on mood however, that may be what your experiencing. Perhaps he is unhappy or still becoming acclimatized to the tank and that's why you aren't seeing the vibrant blue coloration. As per the whole pairing thing I never did it but I have heard that they are happier with a mate. That is as long as the tank is big enough for the both of them, not sure how big your tank is.
