Some people run without carbon. I choose to run it, since it can remove organic compounds that otherwise might accumulate. There's no studies on how much carbon actually helps, and the utility would vary widely based on the animals in the tank. Some soft corals exude a lot of toxins, for example, which carbon can bind.
 
I also choose to run it not only to remove some of the organics that it helps remove but also because it helps keep the water clearer. Especially if you have many soft corals which release toxin and other things into the water that not only can be harmful to other inhabitants but also discolor the water.
