dieing why

It is definitely not looking too healthy. The question of why that is is pretty hard to answer without more info. Could you provide us with info on your lighting, water parameters, etc?
 
Well the fact that you don't have any nitrates isn't helping. I'm also not sure what you mean by 5100k floodlight. What is the wattage of this light?
 
Have you been growing other macroalgae with that 5100Kelvin floodlight? I was told to use 6500K.

What is the wattage of the floodlight and how high is it from the surface of the water?
 
I don't have the wattage It was bought from a fish site designed to grow macroalgae. I was told it is not about the wattage it is about the light output lumans. it is 1600 lumans and it is about 4 inches above the water line.

5100k is sufficient as far as color goes. Whatever wattage it is if its a flood type light then the wattage is probably sufficient as well. I would suspect the caulerpa is suffering from shipping shock. Remove the pieces which have turned white they wont make it any way.

Is this a refugium? Are you regularly feeding fish? If so then you probably have a sufficient supply of Nitrates.
