I have heard of quite a few people getting rid of all of their crabs and just going with snails. You'd just want to make sure you get a good variety of snails. Some will eat detritus, some eat algae, and some will eat just about everything. I, personally, have more problems with my turbos bulldozing their way around the tank than I've ever had with my crabs, but that's certainly not everyone's experience with our clawed friends.
Hopefully that AZNO3 works for you. It sounds like people have had good luck with it. I'm betting the anemone will settle down once you get your nitrates closer to zero. I also wouldn't be too worried about it deflating into a crevice. In nature, they actually look for crevices where they can bury their foot so when they deflate, their not hanging out in the open.
Lastly, I've also noticed my crabs (the emerald especially) like to hang out by the anemone sometimes. My large emerald was chilling out underneath the disk just this morning. I've never seen them harm the anemone, but I think it's more of a combination of knowing there tends to be food around possibly for protection (not that they have anything to be worried about in my tank).
Oh, and one really last thing. Maybe someone can back me up here, but I've heard that if an anemone expells its zoozantha. . .whatever they're called, you can actually see it coming out of the anemone's mouth. I've never witnessed this, personally.
