Does using geletin cause any longer term problems?

As above really, does anyone know if there are any long term problems associated with the use of geletins as part of a feeding regime. The plan is to make my own food for the more finicky and slow feeders, using geletin to hold them together.
I'm sure i've read there was a conection to higher nitrates or some other problem. So any help would be appreciated.

I beleive they are higher in phosphates but I'm not sure. All I know is that when I used one cube of that stuff I started to get hair algae...my cuc never touched it either. I had to pull the chunk out after about 3 days of nobody touching it. use it in one of those mesh clips, so it can be easily pulled out. The hair algae thing is not for certain but I do know it was one of the few things I changed durring that time and I ended up with that crap all over my tank.
