Thinking about getting the LSM. I have a 6x2x2 180 and was wondering if I do get this, how many LED's should I get? 3? 5?

That depends on the physical dimensions. If your 120G tank is 10' x 10' x 2.5" deep, you'd need a lot.

I believe the recommendation is that each LED is good for about 2' x 2' of surface area.

I just got the 2 LED version for my 40g breeder and it is plenty. I would go with the above recommendation of one LED per 2' area - using that methodology, I should be using 1.5 LED's . . . which I think would be exactly right. Also, the amount of wire between the LED's is about 2' - so keep that in mind when purchasing.

As you can see, 2 lights is more than enough over a 36" tank.
