Im just building my fishroom as well and I'm considering using one of these bathroom exhaust fans. I saw one at Lowes that has built in humidity sensing control for the fan. It is adjustable for humidity range and time it will stay on. It would be just a little bit more than the humidity controller you posted earlier. It would simplify the installation though.

I would put the hood fan on the timer with the lights so that when the lights come on, the fan comes on. You'll want the room exhaust on a humidistat, or at minimum a thermostat....The room will prob get too cold if left on 24/7, esp. at night in the winter. I'd hate to see your system crash from a low temp when a thermostat/humidistat would easily automate the whole process for you.
