Will a maxi mini eat a skunk cleaner?

What about a poms Pom crab? Would the anemone on pompom sting each other?

I wish, but no. My cleaner shrimps march right onto the anemone and pull the food out of its stomach after I fed it.
And I suspect my peppermint shrimps of actually having killed one of my previous maxi minis.

Sexy shrimp are way smaller and therefore will do less harm.

As for the peppermint shrimp - I'm not sure, I'm just suspecting them ripping the nem open.

So other than stealing. Skunk cleaners don't get eaten?

I've read that carpets have killed snails. But my Stomatella just runs right through them

There are carpets and then there are carpets.
Stichodactyla tapetum is too small to catch a fully grown Lysmata shrimp.
Stichodactyla gigantea, haddoni or mertensii can surely catch and eat those shrimps, yet I wouldn't be at all surprised if the shrimp still manage to march into those anemones and steal their food.
