Of all of the tangs I have kept my top pick for underrated is the chocolate or mimic tang. Just a great fish, good looking and one of the smaller and mellower tang species.
 
I'd say mimic as well but tomini and scopas would be on the list. I've never understood why people would want a big ugly black when you could go for the subtle beauty of a scopas.
 
There are so many:
Our rock pools have millions of convicts in them.
They are so common, but I always have to have one in my DT.
Also like the tenenti, nigrofuscus, dussumeri ( juvis are a bit bland, but adults are stunning). A healthy japonicus is an exquisite looking fish.

It's basically a more bland clown tang, but less likely to come from a shady collector (and hence better overall survivability).
 
One of my favs is the Desjardini Sailfin Tang its personality is very different from the typical sailfin found in most stores.
 
I love the pacific sailfin tang. One of my favorite experiences in the hobby was in high school I bought a nickel sized speciment that I had found and over the course of a year and half it grew into its adult coloration. It was a beautiful fish and was very friendly. It would eat out of my hand and would even let me pet it. If you have a large tank the sailfin is a nice choice.

+1 I have a striatus right now and it will one of the few fish I will transfer to the new tank. A very colorful fish when it gets hungry or attacks it's reflection in the glass. It's like the poor mans chevron, but not as aggressive as the chevron IME.
 
last month's Aquarium mag or Saltwater Fish asked the same question- the article chose the Convict...I thought that was a very interesting selection...Tangs are beautiful and some can be extremely aggressive...my Powder Blue swims circles around my Queen Trigger and it makes crazy sounds...they can swim in the tightest circles at full-speed...amazing to see...and confuses the hell out of my Queen...
 
IMO the only ugly thing about the sohal tang is their temperament. Full blown adults specimens with streamers are so graceful and beautiful. Beautiful fish but I doubt I would ever get one.

Have to agree with Alex here. The color contrast with the bright orange teardrop. Love the shape. Docile majority of the time, but isnt afraid to get bold if necessary. Swim pattern is amazing. Best Tang IMO
