Be sure your chemical parameters are in check. A settled in zoa should recover in a minute from a large disruption like a large hermit crawling across it much less a fish swimming by. I would expect you have another problem if they never open fully. Check for pests as well.

particularly check your alkalinity: a good reading is, say, 8.3.
