hi, just looking for a little advice, probably will need a chiller anyway. but i am buying a new tank 180 gallons, i really like the look of the oak canopy top, my question is does having a canopy cause the tank to run hotter

Yes and it holds humidity in, unless vented. If it not vented, you can install computer fans to force cooler air into canopy.

No problem if you use LED lighting. I have a glassed-in top with an oak canopy and no heat issues. If your climate gives you any, install one of those multi-fan arrays for tanks in the canopy and that will solve it.

so i wont need a chiller. well maybe i wont . also should the fans should be blowing at the water or out of canopy.

No chiller unless you live somewhere a lot hotter than NY. Some fan kits do both. I find a fan blowing ON the water may knock temperature down 10 degrees. Mine doesn't have that, just exhaust from the light kit fan.

You should always have the fans blowing in to the tank - sucking air out just makes moisture laden air come into contact with the fan motors, greatly shortening their lives.
