OT - Lets all sit back and enjoy a good smoke

Been doing a steady amount of cooking lately. Got a few other projects in the works and will update accordingly.

Made 30lbs of various pepperoni and sausages.

Should I send you a PM to ask what that is?

Haha not at all Larry! Local group of guys here who talk smack, grow corals and drink beer. We get together a few times a year to hang out at big celebrations. We get together around Christmas time for a big dinner and a coral yankee swap sponsored by World Wide Corals.

So this year got a prime rib, rice & beans, buffalo Mac n cheese, potatoes, Pat's bringing expensive cured meats, conquito and some desserts. Gonna be another awesome time.

Wow, great thread guys!!

I've slow cooked, indirect heat ribs on my traditional grill with some pretty good results.

I have a three burner, so I put the burner on the right on with a water pan over it and the ribs on the left. Any advice on getting a better "smoke" on a traditional gas grill? I'd like to try a bigger hunk of meat and if there was some kinda "smoke thing" I could put in my grill to make it better that would be awesome. If I have fun with pimping my regular grill, I might go ahead and look into buying a real smoker.

Appreciate any advice!

Thanks,

Howard

Oh indeed... look up the Amazen Smoke Tube. Mike and I both use them on occasion in our smokers. Allows you to use your favorite pellet flavors and the tubes are cheap! Just look up how to properly light them, etc. Good Luck

Hot damn those look good. Can't say I am as dedicated about grilling as you are haha, looking forward to spring when I can break out the charcoal again. I think one more year with the kettle will be enough to convince the wife I "need" a big smoker.
