brisket is terrible! tri tip is good but it takes forever to cook.
and you do not want to cook tri tip as steaks, cook it only as a roast. and remeber to cut against the grain as you will make the meat more tough. (cut at an angle from the largest part of the roast)
enough onion soup mix for two servings, but only enough water for one.... i like the country style liptons, but any will do. put that in a TIGHTY covered (foil) baking pan and bake at a very low heat, 325, for three hours.... trust me, it will melt in your mouth!
if you add a few veggies to the baking pan before you cook, you have a meal in one pot..... baby carrots, quartered potatos, celery.... YUM!
30 minutes on a charcoal grill is all it takes to make a perfect tri-tip.... rub that baby in all kinds of goodness and turn every 5 minutes.... medium rare. another five minutes for medium and another 5 for well.... oh, don't forget to tent with foil and let it sit for 10 minutes after it comes off....

Costco has good Choice Beef. But those looking for a lower fat content might want to consider "Select" which is leaner. I stay with Choice and just eat slightly less.
BBQ wise I'd perfer charcoal but it's not really worth the added time and effort unless you're cooking something like a whole chicken or roast. For steaks, cut chicken, fish or burgers I see little difference in taste since they don't stay on very long at all.
I keep one of those chip holders in the grill all the time and when I light the burners I'll add a few wood chips which adds some flavor or at least makes the air stink.
