PH is low?

Go in to your classic dash and increase the sample rate to once a minute, your graph looks erratic, only time I've seen that is when I had a bad probe..

Any stray voltage? Is the tank grounded? I have seen bad pumps effect the apex with stray voltage, just a thought..

Overlay ph and amp , see if there is any correlation with any device, probe out of tank reads ok but in tank not accurate, try a conductive cup put calibration solution in the cup , put cup in tank , see what happens.

Sorry what are you saying ? I have put solution by it self and the probe does read the correct reading 10 or 7

I'm combating similar issues with my conductivity probe, it's worse on picking up stray voltage and rf and , magnetic events, all kinds of interference, I have tried all kinds of crazy tricks and still haven't solved the issue, but I've figured the ph probe out, and I can tell but your graph something not right with that probe or apex, not the tank. To many spikes and on and off , that probe or connection is suspect..

The little spike in the ph is where the auto top off is dosing Kalk . It goes up by 2 tenth then back down sample 8.00 then 8.02

Metal cup , foil package, in tank, to see if it is affected by the tank, in your classic dash you can watch the probe in real time, it should react instantly to changes , the probe should not wander around..

I have about 290 gallon total water volume, and kalk reactor as well, don't have those spikes at all. Your larger system should not be showing it..imo

Something might be turning of and on at same time as ato and causing those spikes, I doubt it though..looks like a junk probe, they act different in the tank.from my observations
